Biltong

BILTONG, a form of dried, often spiced and cured meat invented before refrigeration and originating in Southern African countries, including South Africa, Zimbabwe, Malawi, Namibia, Botswana, and Zambia. Various types of meat, from beef to game, such as ostrich or kudu, are used to produce biltong. The word biltong is from the Dutch, meaning “buttock” (bil) and “strip” or “tongue” (tong). The meat cuts vary, sometimes taking the form of filets following the grain or flat pieces sliced across it. Common traditional ingredients include meat, black pepper, coriander, salt, and vinegar.
